Title: Fruit Vinegars
Post by: sarajane on February 02, 2012, 08:47
I'm always on the look out for different ways to use up the fruit from the plot

Does anyone out there still make fruit vinegars, they look easy enough to do but my main question is, (for anyone who still makes it) is what type of receipes do you use the vinegar  in when its ready.

Fruit vinegars make lovely salad dressings,  fruit chutneys or salsas as an acompanyment to grills, roasts or BBQ's.

I make a fresh chutney to eat with roast meat or pate.

I use fruit vinegars with onions, oil and a sprinkling of sugar to onions and bake them covered in fin as an accompanyment to roasts.

A splash of a blackcurrant vinegar in a reduction of chicken stock, red wine, and apple or redcurrant jelly makes a good sauce for grilled meat. I have used raspberry vinegar for this too.

Also a splash mixed in with oil, garlic, seasoning and any winter squash roasted is popular in our house. This can be finished off with some cubes of feta or cheshire cheese and some sunflower seeds.
