Is there such things as a one seeded beatroot

There certainly is, they're referred to as 'monogerm' varieties and they include 'Solist', 'Moneta' & 'Solo' amongst several other varieties.

For an experiment try sowing 4 to a one inch module then planting out the whole module when they are about an inch high - about 9 inches between each module. They push each other aside but you get reasonable sized beets and you twist out the biggest of the bunch first leaving the smaller ones to develop.
