hi,

Theres ZILLIONS of elderberries along the riverbank (it's a stream really but "streambank"?!) (ok, it's a ditch with water flowing in it), which flows next to a path running down one side of our site. Tons of blackberries too. I'm going to try making elderberry wine, I've decided. Anyone here with a recipe or three they'd like to share? Please? cheers!  :D Maybe one with elderberry AND blackberry!  8)

That's what I recall as THE BEST COMBINATION, but I don't generally do elderberry anymore as it takes too long to mature and I am getting more and more impatient regarding getting to drink my wine.


P.S. Except 'English Port' as Berry's ('First Steps') recipe - elderberries 2lbs, blackberries 2lbs, sloes 1lb, blackcurrants 1lb, RGC 0.25 pt. I make 3 galls each year (which after fermentation/racking off the really heavy sediment yields 2 galls), fortify and leave to mature for a cuople of years.

How long, in your experience, does it take? What makes elderberry longer than others?

1-2 years, probably due to the high tannin content. I just haven't got the patience/space to leave wine that long, and also like a wine that tastes good when I rack it off.
