Title: Marrows
Post by: Johnny Norfolk on July 31, 2008, 23:55
Mrs N asked me to grow some for the first time this year. She makes marrow povencale for the freezer and wanted at least 6 medium marrows. I sowed 4 plants we have harvested 5 marrows this week. They are in excellent condition and Mrs N informs me they are the best she has had with the flesh more firm and less watery than previous bought ones.

The problem is we have so many more comming. If you like marrow and have not grown them before they are just so easy. I have fed once every 2 weeks with a very weak tomorite type and plenty of water every day. 2 plants are in pots and 2 in a grow bag. There is no difference in the results. We will try stuffed marrow. boiled marrow, roast marrow.......help.

Marrow Provencale

This dish freezes well. It serves about 4-6.

Ingredients
2 large onions, peeled and finely chopped
4 tablespoon olive oil
1 garlic clove, crushed
1 medium marrow, peeled, de-seeded and chopped into cubes
6 large tomatoes, skinned and chopped
2 tablespoons tomato puree
2 teaspoons dried mixed herbs
Salt and freshly milled black pepper

Method
Heat the oil and cook the onions and garlic for 5 minutes until they are soft.
Add the marrow and fry for another 5 minutes.
Stir in all the other ingredients and simmer until the vegetables are tender, about 30 minutes.

How well do marrows store? Could I keep some in a cool place for a month or two?

The ones I cut before the first frosts quite easily make it to Christmas.
