I believe they are ok for 4 weeks. If you are looking at selling them i think they need to be date stamped though. People tend to use food colouring and a date stamp ;)

Probably a daft question, but how do you mark eggs when laid, and long can you store them for?

Is fridge, or roomish tempritture best?

Many thanks in advance for any advice.

I keep mine at room temperature. I used to mark them with the date in pencil but as I keep them in a rack I know which are the oldest as they are at the front. They are never around long enough for me to worry about them going off :D

I date all my eggs with a pencil as they laid and keep them in a fridge.  As far as I am aware if you sell eggs they are best kept at room temperature like supermarket eggs as if you put them in the fridge then someone buys them from you and keeps them at room temperature they can go off quicker.  I only keep eggs for four weeks at most

I also read that in shops less than 21 days is classified as fresh. Less than 9 days counts as ultra fresh!!!. Don't think i've had a egg get to 9 days except for the one I am desperately holding on to for some reason since they stopped laying

I have started marking my eggs as it helps me know when where why and what.  I am still amazed that eggs can be kept for so long.

Ok I have found this its a PDF and the information about fresh eggs is page 16 -17 http://www.defra.gov.uk/foodrin/poultry/pdfs/eggqual.pdf (http://www.defra.gov.uk/foodrin/poultry/pdfs/eggqual.pdf) Very useful document. Wonder if Aunt Sally will add it to useful info?
