I have lots of root parsley seedlings ,which I have time to plant out now.

Should I plant them out now or at the end of May?

I have never grown them before and want to have casserole veg!

I have sown parsley direct in late April as I always do in a container (in Scotland) and its germinating happily now. I would suggest its likely to be safe for you to plant the seedlings out.

You could always put some out now and the rest later just in case, both my flat and curly leaf over wintered this year and are coming on lovely, not bad to say there was four or five inches of snow on the containers.

You mean Hamburg parsley?..........they should be fine now as they can take a bit of frost.

For harvesting wait until they've had a frost to improve their flavour, but you can't leave the roots in all winter like parsnips though, they are not as hardy as snips!
