Freezer burn is the main reason why vacuum sealers were invented. It's the bit of air that's left in regular bags that does the  burn damage, so by vac sealing you eliminate the burn.

You can even do powdery things in the sealer, but first put the powdered stuff into a plain paper bag that will fit your vacuum bags, fold the top over but don't tape, and then seal. Same with sharp edged things like pasta and rice - paper bag (and label) it first before sealing to prevent punctures.
