As this is our first year of growing which I have to say has been rather successful, What can we grow if anything through winter?

You should find a load of information about this, through search.
And as the reality of it is, you probably down to winter onion and garlic now.
You could try a few things still, depending on your location, but you do not want to get disappointed.
over wintering broad beans are still playing as well. Good luck! And plan and tidy for the spring!

Maybe a beard?

Gobs has it right - you can plant garlic anytime over the next 8 weeks or so(to crop Jul/Aug 2008).  Jerusalem Artichokes can go in anytime (to crop Oct/Nov 2008).

Oriental greens, maybe start some brassicas off.
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.

winter lettuces and rocket - under cloches maybe

you could sow an overwintering onion - to transplant as sets in spring.
garlic as mentioned
you could sow some greens in pots - to overwinter in coldframe - i've just done some caulis this week (gipsy f1 hybrid)  

if you use glass for protection - then you can try lots of things - eiher in the ground, pots or gh.

I have put spring cabbage in, and cauliflowers under glass, and in a couple of weeks I am putting in Meteor pea seeds for an early crop next year.
We have also used the rest of the Little Gem lettuce seeds in the cold frame just to see what happens.

Unless you have waterlogged ground then no harm will come to them in the soil.  After all ... if you miss any when lifting them, they all grow the following year.  :)

Just so, as WG says, perennials, that unlike potatoes, store better in ground and ideally should be lifted as required. :wink:

Overwintered onion sets
Shallots
Feltham first peas
Broad beans
Spring cabbage if you get some plants
Blessed Be

Everything grows green for a Celt

Mostly organic 'cept weedkiller and slugs

Have put me broad beans in Aqua Dulce Claudia. am thinking about protection mentioned elsewhere on this site.

How tall should they be by say end of March, as need to plan what to shield or cover them with?

Fos shelter I put some old Greenhouse glass roundthe bed held up with canes either side and tied across the bed so open on top Worked fine

Yep that'll do fine it's not the cold that harms em it's strong winds and drivin rain breaks the stems or just flattens 'em
