How much can you do with 1 cabbage?
« on: September 12, 2011, 15:51 »
Our lovely neighbour presented us with a cabbage this morning, 7 and 1/2 lbs. Got the grey cells going as to what to do.

So we now have, 1 jar sauerkraut put to ferment, 3 bags of shredded cabbage in the freezer for soups etc. tomato and rice stuffed cabbage leaves in the oven for tea and I still have a big piece, just over a quarter left.

Hope she doesn't give us another on too soon. I am not sure I would know what to do with it. :D
The reward of a thing well done is to have done it....

You don't say what variety this monster is, but if it's a savoy or other green type, it's lovely cooked with bacon, onion and garlic in a large frying pan or wok.  Gently saute thinly sliced onion and diced bacon in olive oil or butter until golden, then add the garlic and stir around for a minute.  Add the shredded cabbage and toss with the other ingredients - it will look as though there's far too much cabbage, but it will start to cook down quite quickly.  You can then put a lid on it and leave it over a lowish heat until it reaches your preferred texture, but stir it every so often to ensure it's not catching on the bottom.  I've also seen similar recipes that add cream and some grated parmesan at this stage, but I've never tried it as it seems like a step too far!!  Best of luck!

Wow CheshireCheese I'm drooling now. Have some english bacon due tomorrow (local bacon is just not the ticket) so will give it a try. As for variety I'm not sure, outer leaves are green but the centre is more white. Will take a pic next time as I'm sure we will get another gift!!
