what to do with garlic which has gone to seed

This year for the first time my garlic has gone to seed.I planted out different varieties from different suppliers. I have just lifted the music and it is a really good size. My question is can I use some to plant in autumn. I use it with rust ok but wasn't sure what to do with the garlic which has gone to seed.  How well will it store and is it just the centre which is hard.  I have about 200 bulbs. Thanks

Music is a hard neck garlic and what you describe sounds like its normal growth pattern. It will have a hard central stem which will have developed a "scape" before maturing. It is usual to remove these before the bulb matures and in fact they can be used in dishes such as stir fries.

When fully dry the cloves can be easily parted from the stem.
Did it really tell you to do THAT on the packet?
