Title: here come the courgettes! Add your recipes.

had a look at my 9 courgette plants today and i have at least two courgettes on each plant ready for harvest now. As a single person I don't think I'm going to be able to eat the entire harvest. So I really hope my neighbours are courgette fans lol. Is it true that the average harvest for a courgette plant is 50? I hate chutney so I can't make that from it and I know they don't freeze well unless I grate them.

Every year I grow too many courgettes (I don't seem to learn) and end up with far more than I need to but luckily I have lots of people who are happy to take the surplus off me.  This year I decided to grow different varieties and after planting up one of each, the person who wanted to take my spare plants was unable to.  At the same time a big bed that I had planned on growing outdoor tomatoes was looking bare as the risk of blight was too high to consider planting them so I popped the rest of the courgettes in there to make it look cultivated ... a total of 14 plants.  I've been harvesting an average of 3 courgettes a day this past week and not all the plants are producing yet  :lol:

I use a lot of courgettes to bulk up meals - I dice/shred rather than slice and add them to meals such as hot pot, spaggy bol etc.  And they go very well with garlic or chilli or with a cheesy sauce topping (a bit like cauliflower cheese)  The other thing I've noticed is that when the courgette season begins in earnest I lose a lot of weight even though I'm eating loads more with keeping up with all the crops that are ready.  I call it the "courgette diet"  ;)

One of our favourite veggie meals uses courgettes. It is simply sliced courgettes and potatoes layered with feta, garlic and mint, olive oil and a little cream cheese or greek yoghurt to help bind it together. Baked like a hotpot and served with tomato and olive salad. Yum.

I have found it is easiest to slice the courgettes into a bowl, add chopped mint and garlic, salt and pepper and lots of olive oil, and mix well, then layer with the taters and feta and a little cream cheese or yoghurt if you want to use it. The more courgettes you use the more "juice" you get, so less oil.

Hi Lizziesmum here - not lizziesdad as the courgette plants are my babies. Have already picked eight decent sized courgettes from just three plants - I shared them with my neighbour as we wouldn't be able to eat them all. They are one of the few things on the allotment that are romping away! Never mind - the sun's shining and the next few days promise good weather so maybe everything else will stop moping and get a growth spurt! Oh yes - cut the courgettes length ways, brush with olive oil, grill them cut side down until skin browns, turn them over, top with chilli tomato chutney and any cheese you like ( grated cheddar, mozarella) and grill untill bubbling and brown. Just lovely!

Those recipes sound lovely Lizzies Mum and Tosca. :)

Will try those as soon as we get any courgettes. Have a few tiny ones showing at last.
I can never get enough of them as I make oodles of chutney with them.

I like making courgette, feta and mint fritters which freeze reasonably well.

I also fry them and preserve them in vinegrette dressing as well as the usual recipes.

Oh yes and I make a courgette and cinnamon cake with cream cheese frosting too.

It's only in the last few weeks mine have apparently decided to live - I can see a few flower buds appearing but they look like boys to me!

Because they were struggling I started a couple off in the greenhouse as well, so with any luck I'll be rat-tat-twoing and courgette-caking along with the rest of you soon!  ;)

Oooooo yes, made some courgette muffins one day, got the recipe from the internet. Yummy! :tongue2:

JayG, the slugs have left me one weedy plant. :( But I have left it in to see if the weather can work miracles. :unsure:

Only two plants (out of 3) survived in the garden, and one of those had its stem half eaten through by a slug, but it's now 3/4 of the size of the other - I think I can call that a minor miracle, if only mathematically!  :lol:

courgette soup - yum, courgette bake with cougette (obviously) tomatoes, mini corn, garlic and motzarella cheese (spelt wrong)  - courgette grated with carrot and/or koh rabi with a teaspoon of white wine vinigar and mayonaise makes a lovely coleslaw.

once my cougettes make a faster appearance i may discover more recipes

I use a mixture of yellow and green ones, along with cauliflower that's blown open and the smallest onions, to make piccalilli with - they make a good substitute for gerkins or cucumbers (neither of which I like!) and absorb the flavour of the sauce really well. I've just put up my first half-dozen jars to mature ready to make presents of at Christmas, and I'm sure the courgettes will make it into several varieties of chutney again this year!

Courgette & cheese soup

Roughly chop about 1lb of courgettes & sauté with a couple of chopped onions.
when soft add 1 pt of veg stock.
Simmer for about 30/45 minutes.
Blend with a stick blender or liquidise.
Add a couple of pots of cream cheese with garlic & herbs & re blend. Adjust consistency as desired(thick/thin)
Adjust seasoning to taste.
re heat & serve.

This freezes really well,I tend to make it really thick to save freezer space & dilute when defrosted.
I use cream cheese from *idl tub each of garlic & herb.

The original recipe called for dble cream but it & I really don't need it  :D

If you have very large courgettes/marrows reduce fluid added as they have more water content.

I have 2 favourites:

1. Zuccini Pancakes (my kids love these!)

Just grate a lot of Zuccini (or Courgette, I believe it is the same?) into your favourite pancake batter (I often use buckwheat flour) and fry like pancakes. Eat with feta cheese on top, or any grated cheese you like. Sour cream goes well too!

2. Zuccini Soup
Grate Zuccini, crush garlic, fry both lightly in butter, add soupstock, simmer until soft, ad cream, season with pepper, serve with garlic bread. Yumm!!

Yep, had a few of those myself.  :unsure:

Haven't been able to get to the lotty for a couple of weeks 'cos of preserving and a offsprings birthday BBQ. His words were I have invited about 30 but they probably won't all turnup. :ohmy:

OH has to be told to harvest them and he doesn't always see them! No missing them when they are this size tho.

When faced with the glut that we get from growing far tooooo many courgette plants there are not a lot of ways to prepare them and freezing is not worth it. So when I was told here is a great recipe using courgettes and stinky cheese I turned my nose up at it and scoffed at it... :(giggle): !!!!!!!!! :(smirk):

I was just not into courgette soup.... but I tried it last week and crickey it is absolutely fabulous!! :(happy): So now all my surplus can be frozen because you can use frozen courgettes for to make it!! I already have enough frozen to make about 10 batches - and I'm making some tonight!!

So here it is...

Creamy Courgette and Dolcelatte soup

INGREDIENTS
30ml olive oil
15g butter
1 medium onion, roughly chopped
900g courgettes, trimmed and sliced
I forgot to add 250g Mushrooms to the ingredients list..
1 tsp dried oregano
600ml vegetable stock
115g dolcelatte cheese, diced
300ml single cream
salt and black pepper
garnish: sprigs of fresh oregano and extra dolcelatte

DIRECTIONS
Heat the oil and butter in a large pan until foaming. Add the chopped onion and cook gently for about 5 mins, stirring frequently, until the onion is softened but not brown.

Add the courgettes and oregano, with salt and pepper to taste. Cook over a medium heat for 10 mins, stirring frequently to prevent sticking.

Pour in the stock and bring to the boil, stirring frequently. Lower the heat, half cover the pan and simmer gently, stirring occasionally, for about 30 mins.
Add the diced dolcelatte, stirring until it is melted.

Process the soup in a blender or food processor until smooth, then press through a sieve into a clean pan.

Add two thirds of the cream and stir over a low heat until hot, but not boiling. Check the consistency and add some more stock if the soup is too thick. Taste and adjust seasoning if necessary.

Pour into heated bowls. Swirl in the remaining cream, garnish with the fresh oregano and extra dolcelatte cheese, crumbled and serve.

Mrs Growster is using them as an additional filler for her frozen 'soup bags'.

Any glutted frozen veg is added to leeks, spuds, carrots etc when she eventually makes a big soup in the winter...

We had courgette soup last night - Small Child said it was 'delish':

We fried off chopped chunks of a mammoth courgette with chilli, onion and garlic, blended it with some stock, added some cream ( :ohmy:) and topped with parsley and a wee bit of smoked paprika.

We had courgette lasagne again this week - it has become a regular on our menu since the courgettes have sprung into production!!  The recipe is in my courgette recipe book I linked earlier in the thread.  I add a little chopped bacon to the tomato sauce and even add a few extra sliced courgettes to add some texture to it.

I love 'em julienned raw, with some ordinary salad cream and a little garlic puree.

I takes me a minute to make the julienne strips, and three hours in A and E with the four hundred tiny cuts on the backs of both hands where the julienne cutter has gone awry...

I love courgettes Mum - Mrs G bakes them with parmesan shavings, pepper and breadcrumbs occasionally, and they are divine that way!

Three hours in A and E is a small price to pay for my Julienned mitts...;0)

I reckon I'd go for a max of eight hours, but no longer...

Invented this morning - roast courgette houmous!  The only recipes I've seen online have used grated raw courgette, and I didn't fancy that.

I just stuck 4 whole courgettes on a baking try in the oven at gas 7 for about an hour - so they were completely soft.   When they'd cooled a bit I took the skins off (they pulled off fairly easily), then squeezed the pulp to renove most of the water.  It's surprising how little solid stuff (pulp and seeds) you end up with!  Then whizzed it with a couple of cloves of gralic,  lemon juice, and maybe a dessertspoon of tahini (sorry, I don't measure stuff unless it's a cake).   I didn't add any salt, but I hardly ever use it in anything so that 's what my palate is used to -  others might want some in there.

It's really quite good and as I eat houmous regularly, I think I might use up quite a few of the blighters like this.

Found a tub of mixed feta cheese with herbs and olives in garlic oil lurking in the back of the fridge.

Just fried 2 yellow courgettes in the oil and poured the cheese/olives on top.  A very quick and tasty last minute lunch which I will certainly do again  :)

I've just grated a whacking great pile, measured them into individual storage bags that I then put into a bigger freezer bag and put the main bag into the freezer.

All bags were labelled with the quantity and what it is so I can later pull out a bag and it's the exact amount I need for zucchini/courgette bread and other recipes I make.

I've just grated a whacking great pile, measured them into individual storage bags that I then put into a bigger freezer bag and put the main bag into the freezer.

All bags were labelled with the quantity and what it is so I can later pull out a bag and it's the exact amount I need for zucchini/courgette bread and other recipes I make.

We're getting about five a day Trills, plus the 'Escapees', which have to be binned, but so far, they've all gone to good homes..;0)

Ha ha ha, Trills!

Bit like that really; Mrs Growster likes to arrange all the veg we've brought home in a trug basket, so that everyone cam see what we've produced. If we meet any chums they get a handful of whatever we have on board, so we get rid of the excess, and a few old dolls and blokes etc get a free veg gift, which seems to make everyone feel good...

You bin the monsters? They're my favourites :)

I like courgettes cooked all sorts of ways, but every now and then I treat myself and let one grow into a monster so I can stuff it with mince and tomatoes and garlic and mozzarella and all sorts of lusciousness, and that's my very favourite way to eat them.

You really must try this recipe.....courgette cake.. Its delicious.

3 eggs,  250ml veg oil,  400g castor sugar,  2tbsp vanilla essence,  300g plain flour,  1tsp baking powder,  2tsp bicarb of soda,  1tsp salt,  500g grated courgettes.

Topping
110g butter,  85g cream cheese,  300g icing sugar. Beat all these items together to make a paste for spreading on the top of the cake.

1. Blend to gether the eggs, oil, sugar, and vanilla.
2. Combine flour, baking powder, bicarb, and salt into the batter mixture.
3. Add the courgettes and mix thouroughly.
4. Spread the mixture into a greased loaf tin(s)
5. Bake in oven at 180 for about 50 - 60 mins, test centre of cake with a knife.
6. Cool then add the icing topping.
7. Eat......absolutely the best tasting cake Ive ever made.

With our Tea tonight....

Fried Courgette ‘n Garlic

One or Two sliced courgettes - 10mm slices
One onion  - sliced  - 10mm slices
Finely chopped garlic – 1 clove (or ¾ teaspoon tube garlic)
Salt and pepper – preferably fresh from a grinder.

Add courgettes to pan with a bit of oil and marg. Don’t separate onion and add to pan. Fry for about 6 minutes turning a few times.
Add garlic, a pinch of salt and a few grinds of pepper, and a few more...
Fry and turn again for a few minutes.
Courgettes need to be a bit crisp and not all mushy so adjust times to suit.

Simples..

Ready when it is firm to the touch and nicely brown on top.  Like a quiche without the pastry.

I just made a huge batch of marrow and ginger jam  :)

I decided on a whim to make the last few jarfuls into marrow, ginger and chilli jam by stirring in a little cayenne. It's added a real kick to it, which I'm hopeful will mellow after a few months  :lol:

I'm sure someone else must have tried something like it......................

We bake them in the oven with tomatoes, peppers, red onions etc anything you like add some olive oil and a touch of balsamic vinegar, gorgeous they go with anything, we just use them as a veg, with steak, pork, lamb.  Give it a go.

That's a great way to do them Ms Cricket! It's going in the book of recipes!

Just as an aside, are will you be changing your name to suit the season...;0)

I'll never change my name and I'm only a part time widow as I do the cricket teas and I do score also and I have been known to play, it is a matter of if you can't beat them join them and I would never see the better half during cricket season if I did not join in.  My cricket teas are legendry the other clubs in the league don't want to go up or down as they won't get my teas (lol).

I hate it when the cricket season finishes, and Mrs Growster starts to get all excited about the harvest!

I never win that one!

Somehow, cricket teas were (are) the nicest way to eat gorgeous sandwiches with tea and real cake, because there was always the smell of grass, the bubble of the urn, and the moaning of the captain to make the day so fantastic!

I reckon that if you started a business, just calling yourself, 'Cricket Teas'. you'd make a fortune!

I love courgette fritters with salad, chips and mayo  :tongue2:    Courgette pakora is a good way of hiding them
I couldn't believe how gorgeous courgette soup would be. It's lush  :)

I grow yellow varieties so I can hide them in cakes and tell folks it's carrot cake or muffins  :happy:  My husband thinks he doesn't like courgettes  ::)

I know we're not supposed to post links to external sites, but hope i'll be forgiven... made this recipe for Courgette chocolate cake today, and it was blooming' Lovely!
Will say I made cupcakes though rather than 1 big cake, and cooked for 14 - 18 mins (one tray cooked quicker than the other)
Made 24 good size cupcakes (I probably could have got a 25th out of the mix, but that would have meant another tray!)

That sounds like what would happen if I sent my OH to the shops! I also needed ingredients today, but took him with me (so he could lift the boxes of wine I can't lift with my dodgy shoulder!)

He once went for bay leaves and came back with a basil plant. "What's the difference" he says  >:(  So, off he went again and brought me back a bay tree. It cost him £30  :lol:

When we were first married I gave him a list of shopping to get as I was visiting 'Granny in the woods'. On it was a white cabbage and he came back with a white loaf.  :wacko: :wacko: I have always made my own bread and it was always wholemeal. 

He is better now and if I have a rush order and he has to go shopping on his own I keep mymobile with me 'cos I will get at least 2 phonecalls about what is on the list. :lol: :lol: :lol:

And my son is just like him.  :ohmy:

I made some courgette crisps in the dehydrator last night and they are...interesting, but on the whole quite moreish.
I sliced courgettes quite thinly, sprinkled Lo-salt on to bring out some of the water and to flavour them.  Dried them off with kitchen paper and dried them overnight in the dehydrator. Nice and crispy and quite low calorie.

1 pint veg stock
½ pt single cream (I used low fat crème fraiche)
salt and black pepper

Heat butter and oil in a large pan, over a medium heat, until foaming. Add chopped onion and fry gently for 5 mins, stirring frequently. The onion should be softened but do not allow to brown.

Add the sliced courgettes and oregano, salt and pepper to taste.  You don’t need much salt as the cheese is salty!!!!  I used a scant teaspoon. Cook over med heat, stirring frequently to prevent sticking, for 10 minutes.  Pour in the stock, bring to boil. Lower heat, half cover pan, and simmer gently, stirring occasionally, for 30 mins
Add the cheese and stir until it’s melted
Process the soup using a blender.  Press through a sieve into a clean pan.  (I skipped the sieve bit!)
Add two thirds of the cream and stir over a low heat. Don’t allow it to boil!
Pour into preheated bowls and swirl on the remaining cream.  If you have any cheese and oregano left over just sprinkle a bit over.

The fennel I used had bolted so was very fibrous so the soup had to be put through a sieve, but the flavour certainly came through.  I think the next one I make with the other bolted fennel I have, I will bruise it and leave in big lumps so I can fish the pieces out when they have finished cooking. I might make a double amount next time to use up more courgette. ::)

Courgette coleslaw.

grated courgette
finely chopped spring onion
small amount of finely chopped mint leaves
salt & black pepper
juice of half a lemon
glug of olive oil.

Just mix it all together and serve.

having gone off mince I made a spag bog by frying 4 slices of bacon  along with two large cubed courgettes,  when crispy I added a bottle of bolognaise sauce to it for 20 mins,  cooked some pasta and mixed it all up and sprinkled some cheese on the top.  Quick and easy and very tasty.

We are new to allotment growing (and new here, this is  my 1st post) having only got our 2 plots of 5 rods each in April this year. We have had a good harvest so far including a glut of monster courgettes, being sick of courgette crisps, courgettes in curries, everyone around having monsters as well. I have made an experimental courgette chocolate cake today and it is so delicious, moist and Moorish, it wont last too long  once hubby gets home and is sort of healthy as well. I need to make another one to work out the exact quantities of items used so will post them when I have done that but it basically I used E.V.Olive oil, grated courgette, cocoa powder, cinnamon, Sugar, flour, baking powder, and bicarbonate of Soda along with some eggs. Cooked it all for an hour and then put in chocolate butter cream dusted top with icing sugar and voila!
Oh and courgette chutney as well. Made it at the same time as my green tomato chutney and in the same way. its delicious as well, also made lime pickle as had a glut of limes as well still not made the lemon pickle but have  around 40 of those sitting in the fridge waiting

Quite right, Mum!  We're up to our old tricks of walking to and from The Patch with whatever we have spare, and off-loading them on unsuspecting people whom we meet...

We had eleven cucumbers on one occasion, and nearly got shot of all of them over twenty minutes, but courgettes are a menace this year, as the conditions for them are perfect!

EASY COURGETTE FRITTERS

There is no exact weights and measures. All depends on size or how many courgettes you have!
Courgettes
Eggs
Self raising flour
Salt
sunflower oil
frying pan

1.Clean and wash Courgettes
2.Slice into 5mm medallions
3.Sprinkle salt over them and leave for 10-15mins
4.While waiting crack a couple of eggs and beat
5.Wipe salt off courgettes
6.Pour some oil into pan and heat
7.Dip medallions into flour
8.Then dip into egg
9.Place medallions into pan and fry till golden.
Eat, hot or cold.

Hi all,
Beside's the usual Zuchinni courgettes, I grow the variety 'Trombicino' which are a bit rampent but can be grown up a trellis.
They have the seeds at one end only, with the rest of the courgette all flesh and therefore less water content.
A light green in colour and they are not F1, therefore the seeds can be saved for next year.

Besides all the different bread recipes you can make with them and the chocolate cake recipe I have. My fav this year is baked breaded courgette sticks. Healthier than deep frying and oooooooooo so moorish. 
Slice your courgette into sticks, sort of like chips. Take three bowls and one you put some plain flour, a pinch of salt and a good grinding of black pepper. The next bowl beat an egg with a little water until blended. Then in the third bowl put some panko breadcrumbs, some freshly grated parmesan(even a handful of grated cheddar will work) add seasonings of choice, I like oregano, garlic powder and a little dried basil. mix well. Put oven on at 200 C and I use one of those non stick sheets on my baking sheet. Take and dip your courgette chips into the flour then into egg making sure to coat well both times and finally into the breadcrumb mix. Line the baking sheet up with as many as you can get on. Don't need to leave space, I put mine up close together. And bake for about 25 to 30 minutes. YUM  I make a quick dip for them using some mayonaise, mixed with a bit of lemon juice and some dried oregano and garlic powder or fresh minced garlic. ( I do love garlic).  This is also great for making baked onion rings too.

You are welcome. I love courgettes and can never have too many. Just wish my plants didn't get mildew every year.   You can also make chutneys and pickles with them. Brownies, muffins, etc Next to Onions they are my next fav vegetable. I even have a jam recipe somewhere using them.   :lol:

My OH makes a lovely courgette and cheese soup. Not massively healthy because of cheese but not too much cheese added. I make soup using roasted courgettes which give it a lovely flavour although after first try, I now don't use a lot of oil as spoilt flavour and very as you might expect oily!  :lol:

As discussed elsewhere, the sugarsnap peas are stringy this year. I've just added equal quantities of courgettes and made a huge batch of soup. It works!

Had a really nice salad in a restaurant recently, super simple. It was simply shredded courgette, tossed in a light oil dressing, a few chopped anchovies and black olives. Lots of black pepper. Was really yum

This is quite simple and tasty as an accompaniment.  Use a mandolin to cut courgettes into fine, long batons, then simply toss them in a plastic bag of well seasoned flour, shake off the surplus, and deep fry in very hot oil for a couple of minutes. Drain and serve.  Even my husband likes this, and he is not a courgette lover.

Oh yes, it was just like High Noon, clanging chimes of doom  :D  I got my courgettes though so worth the wait :)

I made it!  It's fabbo. I tested it out on my husband, not mentioning the dreaded word "courgette", and gave him some fresh cut cucumber out the greenhouse to dip in.  He loved it! So did I. You'd never know it was courgette related  8)

Basically whizz up in the food processor:-

2 med courgettes, peeled and chopped,  sea salt & freshly ground black pepper to taste, 3 garlic cloves, 1/2 cup tahini, 1/3 cup olive oil,1.5 tspns ground cum, 1/3 cup lemon juice.

This probably a version of this recipe here, so apols if it's been tried... (Mrs Growster does all the cooking normally, but as a chum gave me the recipe, she said I could try it, but don't expect treats like this all the time)

I've just had a courgette, bacon and creme fraiche fry-up, with garlic and parmesan, and it was to die for...

(Perhaps the wrong term, but it's well worth doing)! Just fry the bacon in chunks, add the courgettes when it's turning, add the garlic, then toss the lot in a couple of dollops of creme fraiche, and serve up with with a bit of grated parmesan on top...

And have it with a bit of pasta, baked Italian-seasoned tomatoes and a few runner beans for colour...

I am sure it is on here but salt&vinegar courgette crisps have been popular here. Even caught hubby snacking on them and he doesn't really like veg - especially courgettes  :closedeyes:

Slice with a mandolin, per large bowl of slices use a tablespoon of cider vinegar, spread out on dehydrator trays, brush/spray with a teeny tiny amount of oil, sprinkle with salt, flip and repeat. Dehydrate for around 14-15 hours on 55C

Last night I made courgette and bean fritters, which we had for dinner. Today I have cooked up a batch of courgette and red pepper fritters for the freezer. Recipe from kitchen garden magazine a few years ago. Courgette and tomato soup is another staple. I often add some courgette in when I make my usual hummus. I also have a recipe for courgette and dried Apple hummus from the guardian paper 2013.

 The HFW courgette polpettes are way nice.

Courgettes can be sliced into noodles with a julienne peeler . Then just sauté and serve as you would spaghetti or Asian noodles. This is ideal for getting the children to eat more vegetables.

Tonight I sliced & fried in olive oil & knob of butter tiny courgettes( that’s my sneaky plan to not having a glut of them!😂), then when browned & about cooked & seasoned with salt & pepper & stirred through some dried breadcrumbs & Parmesan. Very nice they were too. If I’d have had more time I might have mixed the crumbs & cheese & sprinkled over the courgettes in an oven proof dish & then baked them or even stirred some cream cheese through the courgettes before baking with the breadcrumbs & cheese on top. A bit of garlic would have been nice too

Made loads of courgette choc chip muffins while the kids were over

I julienned some yellow ones for our oriental style salmon parcels in foil last night 😋

As I want to grow just one courgette plant next year (giving up allotment), does the team here have any views on how to grow a single plant without Mrs Growster seeing it?

I rather like the idea of a climbing plant, but have never tried one...

(I can hide it behind a large mahonia in the front garden - she'll never notice..;0)

Although it lacks in the invisibilty stakes, I can thoroughly recommend Parthenon as it produces courgettes without the need to be fertilised, which is perfect if you have just the one plant and female flowers are open with no male flowers nearby. Beautiful dark green shiny courgettes that taste delicious

Courgette and Ginger Jam

1.5 kg (3 lb) courgette/marrow/zucchini, peeled and deseeded weight. Note I don't bother to peel them. Only if the skin is very thick or hard.
4 lemons
50g to 75g (2 to 3oz) root ginger
1.5 kg (3 lb) sugar

Finely grate the lemons then juice them. Place juice and peel in a large container.
Peel and finely chop the root ginger. (I sometimes grate it instead of chopping.) Place in with the lemon juice.
Cut the courgette into small cubes and steam gently until tender. Place into the container with the lemon juice and ginger. Stir in the sugar. Cover and let stand for 24 hours.
Place into a large saucepan and heat slowly till the sugar dissolves, stirring to keep things moving.
Bring to the boil. Boil fairly briskly until the courgette is transparent and the syrup is thick.
Test for setting. Note Courgettes are low in pectin and the jam will never set firmly. It is more a conserve.
If you want a firm jam add some commercial pectin and follow the instructions.
I prefer a firm jam and always add the pectin.

 Makes about 2.25 kg (5 lb) of jam

They're all your plants from the seed you sent me Snows, and mighty fine chaps they are too! I'm using just two Zucchini, and one yellow! (Gave away the other plants, and got a 'virtual hug' and a couple of cheese scones from a lovely chum as part of the bargain)..:0~

The flower on one of them was the biggest I've ever seen, at least eight inches across, and made a fabulous veg in just a day or so, so your's won't be far behind!

Lovely Mr G, glad to be of help & even better you got to help someone else too. Minexare now out of the propagator & in tge greenhouse with the majority of the 20, yes you read that right 20 germinated lol. I wasn’t taking any chances this late in the day so should have some to give away too if any one wants any that is!
