About the same height as a tall runner bean, around 8 or 9 foot.  I grow them on a big wigwam and just pinch out the growing tips when they get to the top.

Snap. So did I, also from Real Seeds - so I'm glad you asked. My first batch of both are an inch or so tall, the next have just gone into the (too-shallow) biodegradable pots. If there is a third lot, they are going into loo rolls! Interesting about pinching out the tops.

And how long do they stay on the plant drying?

For as long as the weather is drying them - if it turns really wet bring them inside to finish drying.

I grew Greek Gigantes last year and they grew to cover a 7ft tall runner bean frame. Good crop that mainly dried on the plant by late September. I found those that I tried to dry indoors after that did not keep so well.

Prolific and pretty flowers and a decent crop too

If the weather turns before they are dry then shell them out, spread out on a tray and freeze. Bag up when frozen.
Defrost more than you need, cook to soften slightly then add what's needed to stews etc. The rest can be portioned up and frozen so it's quicker next time. Or you can cook one large batch after shelling then portion and freeze. ;)

My Gigantes are 4 in tall the Czar 2in. I thought I would freeze them rather than dry them.

I find I run out of freezer space, which is why I dry mine
