Just harvested them when green, do I freeze them green or is it a windowsill 'til red?

I would freeze them as they will dry out on a window ledge.

Yep, freeze 'em fresh or leave the to dry out completely as they'll keep for ages dried and it's easy to rehydrate them when you want to use them
