Best thing to do with pot roast stock
« on: April 08, 2012, 19:25 »
I just cooked and ate a huge beef pot roast. There's loads of the stock left over and I don't want to waste it because it's a lush combination of red wine, beef stock and root veg (onions, celery, carrots). It would make a fab stock for a stew, or even a rich gravy. If I freeze this, how nice is it going to be when defrosted? And if I put it in the fridge, how long will it stay good?

Freeze it & it will be just as lovely when it comes out. You could turn it into French onion soup.In the fridge it should be good for 3/4 days. You can always re boil it & it will last longer.

i would go with the freezer - then it is what you want when you get it out, rather than something you 'should' use.  And it sounds much toooooooo good to be a 'should'!!   :D

I have frozen stock in ice cube bags - very handy - or you could do it in normal ice cube trays then bang them out and keep in a zip lock bag

It tastes just as good as when you froze it
