Any tips on freezing or preserving peppers
always have a target
and an objective.

I did this last year and it worked,simply chop in half,remove seeds and stalk and freeze.When you take them out of the freezer they take only minutes before you can cut to the desired size on pop intp any dish you fancy.(Obviosly not raw as they loose all crunch).

I've frozen some like the other Annie too, but also freeze them already chopped, and I put some in pickling vinegar, and I've put some in Olive Oil, then I can use the oil as well.  And I've also just cooked some with a little sugar and some white vinegar, bottled them and hopefully they will be fine to just put a few teaspoons into dishes as I'm cooking them.

Still got a lot ripening though!!!!

Oh and also made some tomato and chilli sauce and bottled it and some of Biscombe's recipe for Thai sweet chilli sauce, that is delicious!!

So no blanching necessary?

am gonna do mine as soon as they get to a half decent size and before they rot.

If no blanching - dead easy as can do the odd one open froze on a tray as and when I have a spare.

I didn't blanch any of mine, and they are still nice and red looking.  I've also still got some chilli and tomato sauce that I put into jars last year which is still going strong, and a little chilli olive oil that only needs a teaspoon to pack a punch in any recipe!!!!!

Can you just put it in oil whilst it's fresh, or is it dried first? I put some thyme straight from the plot into a bottle of oil. A few days later there was a cloud around the thyme. What did I do wrong? I was scared of botulism, so I got rid of it.  :oops:

May I recommend a maybe strange sounding, nevertheless tasty Hungarian winter stand-by of vitamins?
We make, what we call pepper jam out of them(both sweet and hot types are made). Chop(fairly fine, small chunks, like in food processor) or puree peppers, if chillies the seed is best retained, add some olive and loada salt, put in jars. If anyone interested I look up amounts.
Lot of people like it just spread on buttered bread, it's a bit like marmite though, as very salty, but very good for flavouring soups, stews, etc.
