Frozen plums turning brown on thawing
« on: July 27, 2010, 09:55 »
I picked a load of Victoria's and another variety which i stoned and then chucked in the freezer ready for jams/chutney's etc. However, on thawing they've turned a horrible brown and don't look very appetizing.

Where did i go wrong.......

IMHO you only went wrong by freezing them. They always turn brown to some degree in the freezer and i think it ruins the taste .Did you cover them in water to stop oxidisation?
A return to the old days of bottling and canning would probably be better.

Some forum members do freeze and enjoy plums but for me they are not worth the freezer space.

No, no water over them and i haven't the inclination to bottle them. Oh well, never mind. Remember to use them fresh next time and jam any leftover! Thanks 8doubles!!

If you can hide them in a crumble, they'll taste OK. I seem to remember my mum covering hers with sugar before freezing, not sure if it helped?  ;)

They will be ok for jam, add something colourful like blackcurrants to brighten them up.

Can I make jam with unripe plums, or let the brown rot take them?
