Bought some from a deli, anyone made it? Excellent. Ingredient list but not how to make it. When I have made wild garlic pesto I don't cook the wild garlic so I assume I wouldn't with the nettles? Should I choose young nettles or possibly just the tops??

Never made it myself, mainly because I've never thought about doing it, so firstly thanks for the idea!

I have used nettles for soup though, and only use the tender new tops as the older stems and leaves can be a bit fibrous. Using the same recipe as wild garlic pesto and substituting nettles sounds perfect... bet no-one guesses the special ingredient!
