Much as I like pickled beetroot 15 2lb jars done I also like it roasted and in soup. How long will it keep in the salad drawer? Not much space in the freezer.

it will keep in boxes of damp sand for months  :)

It dehydrates well  :) Cover with foil and bake until just tender, peel, chop and slice thinly. Really good for soups  :)

That's an idea New Shoot I could do them all in one go. What temperature about 150c fan oven for how long?

I see no reason why not but don't put a lid on it  :)

I usually do them at 180 degrees C for an hour or so - depends how big the beetroots are  :)

I don't know your local climate, but you can just leave them out around here. They will be in numbers no much use than baking, but no effort involved.

They were given to me by a fellow plot holder who was going to put them on the compost. I left my carrots in last year and they fared quite well.

I see. Can I recommend some Russian salad not mentioned yet, gorgeous it is: beetroot, sliced thin, natural yoghourt - enough in it's own self, let ferment, season to taste - can jazz  up with thinly sliced roast meat.
