attempting some rhubarb jam today

rhubarb looking good so going to try the rhubarb jam im only going for half a recipie to see how it goes down and will it become a firm favourite , o be honest never had rhubarb jam so here goes .

I made a fab rhubarb and cardamom jam. Was meant to be soft set but was a bit closer too runny but still very very yummy. :lol:
Be like a duck. Calm on the surface but always paddling like the dickens underneath.

Well I've just made some Rhubarb and Vanilla jam, I didn't have any pods so Vanilla extract was used instead. I managed to get Boyfriend to have a taste and he said he liked it (he doesn't 'do' fruit or veg and he saw what went into it) so that's a result in itself!

It's only the second time I have made jam so I was worried that I would either over or under boil it, even though I was using a thermometer but it worked really well. Thanks Aunty for the recipe  :)

Rhubarb and raspberry is also extremely good. For some reason the raspberry tastes even more raspberr-ee than just plain raspberry.

4 lb rhubarb
2 lb raspberries
juice of 2 lemons
6 lb sugar
1lb grated Bramley apple cooked in a little water until mushy

Method
Layer the rhubarb, sugar and lemon juice, cover and leave over night.

The next day add the cooked apple and simmer to dissolve sugar and boil to a set. :nowink:

thanks Mrs Bee sounds good , I don't think I will get many raspberries this year as I gave them an over haul they were all bunched in together making it impossible to get ones from the back should get some though .

Did you know that the Victorians made a fake raspberry jam from rhubarb and they had people who made fake raspberry pips to go in it.

Fake food and food adulteration is not a modern event. :lol:

I've made rhubarb and ginger jam a couple of years ago.  If I remember correctly I added about three tablespoons of very finely chopped ginger to 3lbs of rhubarb.

 It doubles up nicely as a dip for poppadoms.

I always use pectin for rhubarb jam as I never get it to set and even with pectin it is still a 'soft' jam
