Hi,
I have loads of courgette which im trying to eat my way through,lovely as they are, i would to freeze some.

Some say to blanch them whole and some books say to slice them and fry them lightly.  :?

Anyone got any tips?

I found they weren't very nice after being frozen, so I make soup with them then freeze the soup!

or courgette cake and freeze the cake???

I froze some this week. I just sliced them, then blanched them for 1-2 mins. Put them in trays in a single layer, froze them and then put them into bags. They all looked ok.
I looked for various ways and this seemed the most popular, but it was the first time I had tried this.  Going to try courgette soup next.

Frozen courgettes aren't very nice, they become really soggy.  The only way I've found to cook them from frozen is to roast them.  This seems to dry them out a bit.  I've tried to add them to spag bol but always end up picking them out.

Soup was lovely. :D   Give it a try. Got the recipe from the recipe page, but as there are only two of us, just halved the ingredients.

My sister froze some courgettes last year but said that once thawed they were 'rubbery'. I have just read that you have to cut them into 1" pieces - do not peel - and blanche them for 1 minute. Or make a soup - my recipe is very simple and delicious. Chop onion and garlic and lightly saute in butter - add the sliced courgette, peeled or unpeeled, and either a chicken or vegetable stock. Then liquidise. :wink:

I do as Grannieannie does, and include lots of chopped courgette in frozen soups. I also add lots to my homemade spaghetti sauce which I bottle and they taste fine that way. I once froze courgettes and they were plain awful. It's just one of those veg that isn't great frozen on its own, but better as part of a recipe.

Thanks for all the advice,im going to have a go at freezing some,but also found a recipe today for chocolate courgette cake,thought i'd give that a try as well,sounds yummy! :)
