How long can you leave Celeriac in the ground?     How large can you expect it to grow?     Is it OK at any size?
Do you really need al that lettuce/

I've been growing celeriac successfully for quite a few years until this year when the whole crop bolted and went to seed, probably through excessive dryness and summer heat (same thing happened to my leek crop).
I start them off in a heated propagator in late February, plant them out in late April into rich, well-manured soil, keep them well watered (or so I thought) and weed-free. When the roots start to swell, I remove the outer leaves and harvest in September onwards

We tend to eat ours before January. Like most veg when they get too big they loose quality and can become woody, I suppose it will depend on the winter weather to a certain extent. You could always lift them, cut them up and freeze them (or dry them if you have a de-hydrator) and use them throughout the winter in peak condition.

Sorry, I was answering Rowlandwells rather than the opening post. As to how long you can leave them in the ground, I agree with Aidy. Apart from which, I found they can get mushy if subjected to a long spell of sub-zero weather

We don't get enough wet weather over here on the dry side of the country so storing ain't a problem.

Actually Aidy, as child I used to stay with a family friend we called Auntie Mabel near Blackpool so I do remember the tropical weather you enjoy down there, {{{puts thinking cap on to remember the area}}}
It was a tiny village called Carleton which was a sort of suburb of a larger village called Poulton Le Fylde. Sixty odd years ago it was a really rural spot. Probably been absorbed into Blackpool by now
