I read somewhere that racking you beer kits twice (2nd racking after a week) made a clearer, better beer but you need to put two tsb of sugar per pint (One more than usual) in to make the bubbles and then let it stand for a week or two longer. I tried this with my last two kits and it really works, makes a far superior beer.

Thats good to know but wouldn't you need 2 fermenting bins to do it? I personally find scraping the scum off the top works fine. The instructions say you don't need to do this too but I think its meant to just sound convenient.

It dispenses with the need to rack it, but if you've already got 2 bins then thats probably even easier.
first there is a mountain then there is no mountain then there is

Yes Jake and I have four bins so it is easy and I always stir the scum in after the third day so it settles on the bottom, plus yeast on the side of the bin can't be working, it takes a little longer but it's worth the effort. :)

I dont do it for extra strengh just for the clarity.
