I just leave mine in the ground and throw a heap of soil or compost over the top of them, and unless we have a very hard winter they seem to come through ok.

The majority of mine originated from seed.

Yes. I frequently over winter tubers from my seed grown dahlias.
We come from the earth, we return to the earth, and in between we garden.
