If you are geared up for a start this year then you should consider these readibly available fruits.

First: Elderberry. Use only 2.5 - 3 lbs of fruit to the gallon. Slow to mature and is best left for 6 -7 years.

Second: Apple. Tends to be acidic.

Third: Combination. Make a batch of each of the above then when the liquor is transferred to the demijons, instead of throwing the residual pulp on the compost heap tip both into one mash bucket, add another batch of sugar and water and ferment again. No extra yeast is needed. This tends to produce a superb young wine but with poor keeping qualities.

Root veg also make high quality wines. Parsnip, carrot etc. and you still get to eat the roots.

Here's a link to the rhubarb recipe thread. I was going to try rhubarb wine this year but other things got in the way. It's quite sweet apparently. Will definately be trying it at some point as well as parsnip wine.

p.s. I know its not strictly fruit but it is quite a fruity taste.
