Oca harvest

Dug up my first ever oca plant this morning. No pink ones on this particular plant - is that normal? I could see pink ones sticking up under the other plants. Also, is it ok to eat the really green ones?

Did you plant more than one kind? I have 2 kinds, so get pink&white and peach. I can never remember which I have planted where.

Personally I wouldn't eat the really green/all green ones.

Ooh they look lovely! If I did it's because there were different kinds in the packet of 5 seed tubers I got from (I think) T&M. I can't remember whether they were different colours.... but anyway I still have some pink ones to dig up. I will be saving some to replant next year as they were very delicious roasted.

The top growth on mine dies off due to the frosts the weekend before last, so I am going to have a look what is underground this coming weekend.

So far I've done it roasted - it tastes like tangy potato, and stir-fried (sliced up fairly thin) and it is a bit like tangy water chestnut.
I expect it will be good with fish.
