I want to dig up the last of my leeks & swede so that I can clear the beds ready for another crop.  I would like to freeze them so that I can also have some later on in the year when the new crop is not quite ready.

I'm all for an easy life :D  - can anyone tell me if I can just chop, bag and freeze immediately or do I have to blanch them first?


please, please, please say you can freeze without blanching :wink:

I tend to blanch most stuff, with the exception of a few things which when defrosted I will cook for mashing....swede,carrots etc

I've never frozen leeks, but I have frozen swede. I peel and dice it and freeze it - have never blanched it and it has always been fine.

I don't think you will have a problem if you intend to use the leeks soon, but if you want to keep them in your freezer quite a long time then you are better blanching them.

Any more info on freezing swede please,  i have a glut of it and would like to get it frozen but do i blanch it first or not
