hello all.
for years we have preserved our eggs in water glass which we got from the local chemist.
Now it seems we can`t get it, which is a pain with our surplus going to waste, any one got a source of the stuff please

Don't fancy preserving my eggs at all Ken, but when I had a glut, I tried freezing them!!!!!

Yes, I know people say you can't freeze eggs, but you can if you mix the yolk and white together.  You can't have a nice fried egg, or a nice boiled one, but I've sued them in scrambled eggs, omelettes and cooking.  

The first time I tried it, when I defrosted them, they looked weird, all gooey, but mixed with milk then made into scambled eggs. they tasted just the same!

Mind you, with the ex-battery chooks we have now, they ae laying less and less. only got 8 eggs today, from 50 chooks!!!!!!

thanks we had  great sucess preserving eggs for a year or so in water glass, [sodium silicate] a tried and trusty method.
eggs ok for just about every thing except boiled eggs, ace for cakes amnd such

Does anybody know where I can buy waterglass.  I used it a bout 5 years ago and it was perfect.  Now I cannot find the remainder of my waterglass and need to buy new.

I have frozen eggs just beat together.
 fine for cooking you just have to remember to defrost

I froze them individually in silicon cup cake cases, but didn't beat them. When defrosted they are a little weird it has to be said. The yolk defrosts as a solid lump, but we have managed to use them for frying or if bashed up and beaten in with the liquid white, can be scrambled. 
I much refer Fresh, but waste not want not!

It may not be to eveyones taste but I pickle my surplus, home pickled eggs are the best and are always a nice addition in a gift hamper... Just a thought :)

Have you seen How to Freeze Eggs ? Very easy and it works a treat.

An interesting thread indeed but I have another way of dealing with my glut of eggs, after all, I have 30 hens so fresh eggs is never an issue lol!

I never sell my eggs but I do give them away... to eveyone!
I never ask for anything in return but more often than not tradition trade comes into play....

Sister: A Sack of layer pellet every month.
Parent's: A hand weeding the veg plots now and again.
Little old lady next door: Flesh Apple Pie :)
Mate's: A pint of Holdens down The Bell :D

A do like the idea of preserving in general and its somthing I need to become more active in, especially where my vegi's are concerned.

Apart from pickling are there any way's of preserving eggs that dont involve a freezer? Im personaly trying to move towards a cold store/root seller method of storing my preserves.

Other methods apart from freezing which I think easiest (unless the power goes out):

  • Painting with dilute gum arabic
  • Salting
  • Pickling

Eggs are a great source of protein and vitamins. Current medical advice is eat what you want and there are so many dishes you can make with eggs that they need never get boring.  See Nutritional Value of Eggs

I tend to freeze mine as pasta dough, flattened into a cake and well wrapped.  It freezes well and you don't need a pasta machine.  A rolling pin works fine so long as you are not too worried about a slightly rustic look to the finished product.

That combined with tomato sauce made from your own toms is about as good as it gets  8)
