I think it's a little early yet Nat,

At the moment I'm starting my dahlia tubers that Yabba sent me after a swap  :D   LINK

I'm always wary of starting off anything too early, better done at the right time IMHO. Don't worry about the place being cool they don't need any real warmth just somewhere light and frost free.
Even if you don't chit at all you probably will loose only a week or so in the season and not notice much difference in quantity  :D

It's a smidge early to be sparking your dahlias off, if you have heated beds then wait until valentines day, otherwise you need to wait until the soil warms up a smidge more ( march / april at earliest ) ;)

I never chit anyway... Never seen the point myself and on one of the few Gardeners worlds I saw they did a test and there was no difference to chitted and none chitted. Takes a week or so longer in the ground.. but I would rather that than a few hundred spuds chitting away in space I don't have for them :)

Gardeners World found that earlies gained from chitting but maincrop did not. I seem to remember that they planted earlies and main crop all on the same day. Usual practice is to take a bit of a risk with earlies but delay main crop until the soil has warmed up.

They rather missed the point of chitting main crop. If potatoes are chitted they have broken their dormancy and are kept on hold in a cool place. There they can wait until your soil conditions are perfect and will grow away rapidly.
