And what do I do about it?

I know you can put pellets down if it's slugs but seeing as I seem to be earthing up every few days (honestly, the potatoes won't stop!) I wouldn't want to accidentally shovel the pellets onto the potato plants.

I also hear a lot of talk of organic pellets, but I can't find these where I am.

If you don't want to use chemicals near your plants but aren't completely committed to being organic, you could use normal slug pellets thinly spread around the outsides of your beds. That would attract the slugs and snails away from your plants to an extent, though the organic pellets are easily available online.

Well the little b*ggers are still at it. Does it make much difference either way?

I have considered getting that but I heard it was:

a) for underground slugs only (not overground)
b) Only for the last six weeks of growing

Or are they not the case?

It is something I want to get as the slug pellets aren't going to stop them underground.

This is probably a daft question, but what's the knock on effect of the leaves getting eaten? Don't the plants and therefore tatties grow as well?
