Recipe for wild fruits cordial?

Hi All,

I have been watching the hedgerows around me and there are lots of wild fruits to gather (if the weather would dry up!) we have made jams which are a huge success, but as I drink quite a lot of juice (cranberry etc.) I was hoping to make home made diluting juice with perhaps some elderberries, has anyone made something like this that was a roaring success, I don't drink wine so that is out!

Elderberry Syrup...

Fill a casserole with berries and put into a barely warm oven, as the juice forms keep pouring it off, strain the berries through 2 layers of muslim. To each pint of juice add a pound of sugar, bring to the boil and simmer for 30 minutes, strain again and bottle.

Add 12 cloves as an alternative when simmering and when diluted in hot water you have a very old fashioned but lovely cold remedy.

You can adapt this to almost any fruit.

Hi hayles62,

Thanks that seems like a fairly straight forward recipe, would it help or be ok to mash the berries?, we have an AGA so there is no barely warm oven I hope the simmering oven won't be to hot?

I would think the coolest of the ovens on your Aga would be fine (You lucky things, always wanted my own Aga, used one though and loved it)

and I use my potatoe masher and gently sqeeze the juice as it heats up. The recipe is from a 1947 Womens Institute book (You don't argue with them gals) I was given by a lovely, kind lady called Iris. :D

Thanks, Yes of all the money I've spent on the home the AGA was the best spent! We've had it for 6 - 7 years and it always makes me smile when I walk in the kitchen!

Lovely AGa spud - your pic brings back some memories - i shared my early childhood with a cream coloured coal fired effort which always used to take for ever to get re-fired up when we returned home from holiday... it was the warm heart and soul of the whole house.
